Kyogoku Kaneyo's Amazing Kinshi-don!

This video shows how Kyogoku Kaneyo's popular menu item "kinshi-don," is made.

Kyogoku Kaneyo was established in the early Taisho Period and is listed in the Michelin Guide.
Kinshi-don is a specialty of the shop and is made by placing a fluffy rolled Japanese-style omelette​ on top of a bowl of una-don, as shown in the video.
The look and feel of this dish is impactful, with the rolled egg sticking out of the bowl and the lid not being able to close fully.

In the video, you can see the entire process, from processing the live eel to frying the eggs and placing it over the una-don.
